Avocado Taco!

Ingredients:

1 1/2# ground bison

2T butter

4 garlic cloves (peeled & minced)
1 yellow (peeled, halved & diced small)
1T chili powder
1t cinnamon
1t cumin
1t oregano
1/2t garlic powder
Salt/Pepper (to taste)
1 (15oz) can tomato sauce
3 avocados halved (seed removed)
6 scallions (sliced thin – butts removed)

1/2C cherry tomatoes (halved)
1/2 head romaine lettuce (shredded thin)

1/2C cilantro (chopped fine)

Directions:

1. In a large heavy bottomed skillet over medium-high heat.

2. Add in butter, garlic and diced yellow onions. Cook about 5 minutes, stirring frequently, until

the garlic is fragrant and the onions are soft!

3. Add in bison and spices (chili powder, cinnamon, cumin, oregano, garlic powder, and salt/

pepper) and brown until cooked through, 7-10 minutes. Break meat apart into tiny little

pieces with a spatula while it cooks !

4. Once the meat is cooked through, add in the tomato sauce and cook an additional 3-4

minutes, allowing the juices to cook off a bit.

5. Turn the heat off and add the sliced scallions and cherry tomatoes to the mixture. Toss well,

taste, and season further with additional salt and pepper if necessary.

6. Serve a hefty scoop of the meat/tomato mix over 1/2 avocado, top with 1/2C romaine, and

a pinch of cilantro!

7. Enjoy!
