Salted Raspberry Caramel Ice Cream

Serves: 1½ cups
Ingredients
Instructions
  1. In a small saucepan over medium heat, combine cream, maple sugar, vanilla extract and salt. Stir until completely combined.
  2. Bring to a boil, then set a timer for 12 minutes, being sure not to let the mixture boil over. After 12 minutes, reduce the heat to low and simmer for 5 more minutes or until the caramel coats the back of a spoon.
  3. Remove from the heat, let cool.
  4. Place a small saucepan over medium heat. Add raspberries and honey. Mix for about 10 minutes until raspberries have completely broken down into a sauce. Place in a blender to puree then press puree through a fine mesh strainer using a spoon to get out all of the puree, leaving behind the seeds.
  5. Pour the raspberry puree into the caramel sauce, place over medium heat and mix to combine and soften.
  6. Pour raspberry caramel sauce over ice cream and top with coarse sea salt.

CROSSFIT CLASSES:

  1. Every minute, on the minute, for 15 minutes (5 sets):
    Minute 1 – Strict Handstand Push-Ups x Max Reps
    Minute 2 – Alternating Pistols x 12-16 reps
    Minute 3 – Toes to Rings x 6-8 reps
  1. For time:
    Run 800 Meters
    15 Deadlifts*
    30 Hand-Release Push-Ups
    (successful reps must start from the top extended position, and the knees must never touch the ground)
    Run 400 Meters
    10 Deadlifts
    20 Hand-Release Push-Ups
    Run 200 Meters
    5 Deadlifts
    10 Hand-Release Push-Ups

*Use a weight that will be appropriately challenging, but safe. You should be able to complete the initial 15 reps in a maximum of three sets of 5 – do not go heavier than that.

Minute 1 – L-Seated Dumbbell Press x 8 reps @ 20X1
Minute 2 – Alternating Lateral Lunges x 12-16 reps
Minute 3 – V-Ups x 15 reps

B. For time:
Run 800 Meters
40 Kettlebell Swings
30 Hand-Release Push-Ups
(successful reps must start from the top extended position, and the knees must never touch the ground)
Run 400 Meters
30 Kettlebell Swings
20 Hand-Release Push-Ups
Run 200 Meters
20 Kettlebell Swings
10 Hand-Release Push-Ups
